This is a southern classic pie recipe. Since I am from out west, I hadn’t ever heard much about sweet potato pie, and when I did hear about it, I thought it sounded gross. I am not a huge sweet potato fan. There are only a few ways that I will eat them and they are all unhealthy. I was told that I needed to try it, so I finally did. I absolutely loved it! It is similar to pumpkin pie, but has a little bit different flavor. I made this pie from real sweet potatoes that I baked in the oven and then put them in the food processor to make them smooth and creamy. The pie is smooth and creamy and has the perfect amount of spice mixed in with the sweet potato. This will definitely make its way into our Thanksgiving pie routine. I hope you love this recipe as much as we do!

Ingredients:

1 9-inch unbaked pie crust

2 c. Mashed Sweet Potato (or about 2-2 ½ lb. Sweet Potatoes)

1 c. Sugar

1 c. Evaporated Milk

2 Eggs

1 tsp. Cinnamon

½ tsp. Nutmeg

½ tsp. Ginger

¼ tsp. Allspice

½ tsp. Salt

1 tsp. Vanilla

Bake at 350°F for 45-55 minutes

Preparation:

1. Heat the oven to 350°F. Bake 2 large Sweet Potatoes for 1 hour, or until they are soft all the way through. Remove them from the oven and let them cool completely. You can bake them a day ahead and refrigerate them.


2. Make or prepare a pie crust. Set it aside. If you want a delicious pie crust recipe, click here.


3. Preheat the oven to 350°F.


4. Take the sweet potatoes and scoop the insides out from the peel. Discard the peels and place the sweet potatoes in a food processor. If you don’t have one you can use beaters to make it smooth. Mix it until it is smooth and creamy.


5. Place the Sweet Potato in a mixing bowl. Add the Sugar, Evaporated Milk, Eggs, Cinnamon, Nutmeg, Ginger, Allspice, Salt, and the Vanilla. Mix it until it is smooth and creamy.


6. Pour the pie filling into the unbaked pie shell. Bake for 45-55 minutes, or until an inserted toothpick comes out clean. Remove from the oven and let it cool completely.


7. Serve and enjoy!
