Cheesy Broccoli Cauliflower Soup

This is by far my family’s favorite soup. Sometimes getting kids to eat their dinner is a struggle, and sometimes some of the kids like a meal and the others hate it. Not with this soup. It is gone within minutes and they are asking for more. This soup is also family friendly because it is so simple and comes together so quickly. Beginning to end is 30 minutes! It can also be used with a bread bowl. The consistency is perfect for it.

Ingredients:

In Large Soup Pot

1/2 head Cauliflower

1/2 head Broccoli

3-3 1/2 c. Water

3 Tbl. Knorr Chicken Bullion (the brand matters!)


In Smaller 4-8 Quart Pan

1/2 c. Salted Butter

1/2 c. Flour

4 c. Milk

2 c. Cheese

Preparation:

1. Get a pot big enough for your soup (see this tip for what to look for in a soup pot).

2. Cut up the Cauliflower and Broccoli in medium chunks. It doesn’t need to be bite sized. (See Picture)

3. Put them in the pot and add the Water. You don’t want the vegetables covered or your soup will be runny.

4. Add 3 Tbl. Knorr chicken bouillon. And trust me on the brand. I don’t usually use brand names, but on this one it makes a difference in the taste! Here is a link to the one I use.

5. Turn your stove on to high and boil until the vegetables are tender (Pokes easily with a fork, but it is not mushy).

While this is cooking, I start making the cheese sauce (Step 7 below).

6. When the vegetables are tender turn off the stove and mash them with a potato masher (Click here to learn about Potato Mashers) to make them small. I like little chunks, but you can mash them according to your preference. (See Picture) DO NOT drain the vegetables.

7. In a separate sauce pan melt the Butter.

8. When the butter is melted and starting to bubble add the Flour and whisk it in. Stir till it is smooth and then continue cooking for about a minute.

9. Add the Milk and stir it until it is smooth. Continue cooking until it thickens. Usually until it is just starting to boil.

10. Take the pan off the stove and stir in 2 cups of Cheese.

11.  Add your cheese sauce to the vegetables and stir them together.

12. Your soup should still be hot and ready to serve! Garnish with cheese and enjoy!
