No-bake Pumpkin Pie
This is a delicious and simple recipe that is so much faster than regular pumpkin pie without sacrificing any flavor! This is my new favorite way to cook traditional pumpkin pie. This is my grandma’s recipe. I made a few tweaks to it to improve it, but this recipe really is perfection! I love pumpkin pie, but don’t love how long it takes to make! So, if you are like me and want to make the perfect pumpkin pie without taking so much time, then this recipe is for you! My husband’s favorite food is Pumpkin Pie and he went wild over this recipe. He is pretty picky in this area so I know it is good when he approves. This pie has a great texture as well and goes perfectly with some whipped cream. If you are looking for that perfect pumpkin pie recipe for Thanksgiving or for a fall treat, then try this recipe! I hope you love it as much as we do!
Preparation:
1. Bake an uncooked pie shell. If you want a delicious pie crust recipe, then click here.
2. In a medium-sized sauce pan combine the Sugar, Cornstarch, Salt, Cinnamon, Nutmeg, Ginger, and Allspice. Stir it together.
3. Separate the Egg Yolks from the whites. Discard the Egg Whites and set the Yolks aside.
4. Add the Pumpkin and the Evaporated Milk to the Saucepan. Stir together. Turn the stove onto a medium heat and cook till it starts boiling, while stirring constantly.
5. When it starts boiling, add the Egg Yolks and stir them in fast. Continue cooking the Pumpkin mixture for 3 minutes while stirring constantly.
6. Pour the hot pumpkin pie filling into the baked pie shell. Smooth it out evenly and refrigerate it for 3-4 hours.
7. Serve and enjoy!
