Navajo Tacos
This has always been one of my favorite meals! We used to eat this when I was little and I have loved it ever since. This is a classic “western” dinner. I love the Fry Bread because you can eat it with butter and honey, or you can turn it into this hearty dinner with refried beans and toppings. My kids and husband are always very excited when I serve this meal. I also love to enlist the help of everyone to get everything chopped. It is a great dinner that everyone can help with, and they usually enjoy helping! I hope you enjoy it as much as we do!
Ingredients:
2-3 cans Refried Beans
2 Tomatoes
1 Head Lettuce
1 can Olives
2 Avocados
2 c. Shredded Cheese
Sour Cream
Salsa
1 Bunch Cilantro
Preparation:
1. Cook the Fry Bread. Click here for my Fry Bread Recipe.
2. Warm the Refried Beans in the microwave.
2. Dice the Tomatoes.
3. Shred the Lettuce.
4. Slice the Olives.
5. Dice the Avocado.
6. Shred the Cheese.
7. Serve with your choice of toppings. We love Sour Cream, Cheese, Salsa, Guacamole, or Chopped Cilantro.
