This is a delicious and simple recipe that is perfect for a busy weeknight dinner. The whole thing comes together in 30 minutes or less, and is a hearty and filling meal. My kids don’t always like Enchiladas, but they really liked this recipe. I hope you enjoy it as much as we do!

Ingredients:

1 lb. Ground Beef

2 cans Cream of Chicken Soup

1-4 oz. can Diced Green Chilis

2 c. Sour Cream

1 can Olives, Chopped

2 cans Refried Beans

3-4 c. Shredded Cheddar Cheese

8-10 Flour Tortillas

Preparation:

1. Preheat the oven to 350°F.


2. Brown the Ground beef in a frying pan and drain off the excess grease. Set it aside while you make the sauce.


3. In a medium-sized mixing bowl combine the Cream of Chicken Soup, Green Chilis, Sour Cream, and the Olives. Stir it together until it is mixed well.


4. Warm the Refried Beans in the microwave so that they are easy to stir.


5. In a flour tortilla, add some Ground Beef, Refried Beans, a scoop of the Sauce, and some Cheese. Roll the tortilla up and place it with the bottom down in a 9x13 glass baking dish. Make sure you save about 1/3 of the sauce to spread over the top of the enchiladas. Make 7-8 more enchiladas until the pan is filled up.


6. Spread the remaining Sauce on top of the tortillas. Sprinkle with Shredded Cheddar Cheese.


7. Bake for 20-30 minutes, or until it is heated through and bubbly.


8. Serve with Salsa, Sour Cream, Guacamole, or anything else you enjoy.
