Taco Salad
This is a delicious and simple recipe that my family has eaten for years. This is a different version of Taco Salad, but I love it because it is so easy and healthy. My kids always love this meal, although they don’t always love salads. This is a great way to get them to eat salad because there are so many other flavors with the salad. You can serve this with tortilla chips or you can get creative and use Doritos or Fritos. There is no right way to make this meal. I also love this dinner because it is fast and easy and I can make a big batch to have leftover for the next day. You can get creative with whatever toppings you enjoy. I hope you love this recipe as much as we do!
Preparation:
1. Cook the Rice. I usually cook 2 cups dried rice.
2. In a large pot heat the Chili and the Corn until it is nice and hot.
3. Dice the Olives, Tomatoes, Green Onions, Avocado, or any other vegetables you enjoy.
5. Chop or shred the Lettuce.
6. Layer your plate with Tortilla Chips, Romaine Lettuce, Rice, Chili, Cheese, Sour Cream, Olives, Tomatoes, Green Onions, and Avocado. You can add some Salsa for more flavor, or use Ranch Dressing.
7. Serve and enjoy!
