Cilantro-Lime Butter Chicken
This is a delicious and easy chicken recipe that I love to make for my family! You can make it for Cinco de Mayo, or any other time you want some delicious Mexican Food. You can pair it with Cilantro-lime Rice, Refried Beans, or you can shred the chicken and use it on Tacos or on a Salad. The options are endless!
Preparation:
1. Slice the Chicken Breasts in half horizontally. Place the chicken in a gallon Ziplock bag.
2. Mix the Olive Oil, Salt, and the Lime Juice in a small bowl and add it to the chicken. Let it marinate for 30 minutes.
3. Grill the Chicken on low for 7-8 minutes on each side, or until the chicken is cooked through completely. The chicken will be moister and more tender if it is cooked on low.
4. Chop the fresh Cilantro and mix it with the Butter, Lime Zest, and the Tabasco Sauce. After the chicken is cooked, brush the butter mixture onto the chicken. Garnish with Cilantro.
5. Serve and enjoy!
