
If you are in a baking mood, then this recipe is a must try recipe! I could not believe how good these turned out. I had some scones when I was in Ireland and I wanted to duplicate them, but make them softer and fluffier. I used my soft biscuit recipe as a base and added the strawberries and a little sugar to make them sweeter and the result was amazing! This made a delicious and filling breakfast that the whole family loved. I refrigerated the rest and they ate them for another breakfast warmed up again. They were good the second day as well. This would make a great holiday breakfast, or a good weekend breakfast. These are better than the bakery, and we will definitely be making them again! I hope you love this recipe as much as we do!
Preparation:
1. Preheat the oven to 450°F.
2. In a medium-sized mixing bowl combine the Flour, Baking Powder, Sugar, Cream of Tartar, and the Salt. Stir them together. Then mix in the Butter until it is crumbly, but don’t over mix it. See the picture for an example.
3. Chop the Strawberries into small pieces and add them to the mixture. Add the Buttermilk and stir them together until it clumps up into a ball of dough. Knead the dough together several times until it is ready to roll. Don’t over knead it.
4. Roll the dough on a floured surface into a circle. It should be about an inch thick. Cut it into triangles. I cut it into 8 equal triangles.
5. Place each scone on a baking sheet. Bake for 12-14 minutes, or until lightly golden brown on top.
6. While the scones are baking, make the glaze. In a small mixing bowl combine the Powdered Sugar, Milk, and the Vanilla. Mix it until it is smooth.
7. Drizzle the glaze over the scones when you remove them from the oven.
8. Serve and enjoy!
