This Strawberry Muffin recipe is delicious! The cream cheese makes these muffins creamy and the perfect texture. My family loves these muffins. I like to make them for breakfast, brunch, or a snack. They are the perfect Spring or Summer food. Even some of my kids, who don’t usually like fruit muffins loved these! I hope you love them as much as we do!

Ingredients:

1/2 c. Salted Butter

1 c. Sugar

4 oz. Cream Cheese

2 Eggs

4 tsp. Baking Powder

1/2 tsp. Salt

1 tsp. Vanilla

1 c. Milk

2 1/2 c. Flour

1 1/2 c. Fresh Strawberries

Bake at 375°F for 20-25 minutes

Preparation:

1. Preheat the oven to 375°F.


2. In a medium mixing bowl cream the Butter, Sugar, and the Cream Cheese until it is smooth and creamy.


3. Add the Eggs and mix it well.


4. Add the Baking Powder, Salt, Vanilla, Milk, and the Flour. Mix it well.


5. Chop the Strawberries in small pieces. Add the Strawberries and stir them in.


6. Place muffin cups in the muffin pans. Spray the pan with pam spray. Then fill each muffin cup till it is mostly full. I like to use a 1/3 c. measuring cup to fill the muffin cup.


7. Bake the muffins for 20-25 minutes.


8. Remove from the oven.


9. You can serve warm or cold. Serve and enjoy!
