Wow! If there is a simple and delicious breakfast recipe, this is it! I made this for the first time for a church brunch activity and I got tons of compliments on it, but I didn’t even get a chance to try it myself because it was gone. I kept wanting to make it again, but it kept getting pushed to the back burner during the holidays. I finally got around to it and I wish I would have just made it for Christmas morning. It was that delicious! I took a bite and wanted to keep eating. It took all of my will power to stop! This is going to be a Saturday morning breakfast for years to come, and I love that it only takes a few minutes to put together. Top this with a delicious and easy buttermilk syrup and you have absolute perfection in every bite! I hope you love this recipe as much as we do!

Ingredients:

1 loaf Brioche Bread

8 Eggs

1 ¾ c. Milk

½ c. Sugar

1 tsp. Cinnamon

1 tsp. Vanilla

2 c. Frozen Raspberries

¼ c. Salted Butter

2/3 c. Brown Sugar

Preparation:

1. Cut the Brioche Bread into 1-inch cubes and place them into a 9x13 baking dish that has been sprayed with Pam Spray.


2. In a medium-sized mixing bowl combine the Eggs, Milk, Sugar, Cinnamon, and the Vanilla. Mix them together. Then pour it over the top of the Bread. Cover it and let it sit in the fridge overnight and bake it in the morning, or you can let it sit for an hour and then bake it.


3. Preheat the oven to 350°. Bake the casserole uncovered for 30 minutes. While it is baking remove the raspberries from the freezer and let them thaw and also prepare the brown sugar topping.


4. In a small mixing bowl mix the Butter and the Brown Sugar together. When the casserole has baked for 30 minutes, remove it from the oven and sprinkle the Brown Sugar mixture over the top. Then sprinkle the Raspberries evenly over the top.


5. Bake it for an additional 15-20 minutes, or until an inserted toothpick comes out clean.


6. Serve with Buttermilk Syrup. Click here for the recipe. Enjoy!
