Banana Muffins
I have been on the search for a banana muffin recipe for a while. I decided to develop my own based on a few different recipes. These muffins are so light, and they have the perfect taste and texture. My family loves them! I was so happy with how they turned out. They are good for breakfast, or with a soup on a cold day.
Preparation:
1. Preheat oven to 350°F.
2. In a mixing bowl, mash 3 Bananas with a fork till there are no chunks.
3. Add the Butter and the Sugar. Mix this well with a hand mixer or in your Kitchen Aid.
4. Add the Eggs, Sour Cream, and Vanilla and mix this well.
5. Add the Baking Powder, Baking Soda, Salt, and Flour and mix it well.
6. Line your muffin tins with paper liners. I like to spray them with Pam Spray so that the muffins don’t stick. Fill the muffin cups almost to the top. I like to use a 1/3 measuring cup to fill my muffins.
7. Bake for 25 minutes.
8. Remove them from the oven. You can serve these hot from the oven, or they are good when they are cooled.
9. Enjoy!
