Bran Muffins
This is a delicious recipe that came from my grandma. I have tried several recipes of bran muffins and this one is by far my favorite! She used to make it for her kids when they were younger. It is simple to put together. My kids love them and they make a delicious and quick breakfast for school mornings. They also freeze really well, so you can make a big batch and take them out of the freezer as you need them. I also like to make these to go along with soup during the fall and winter.
Preparation:
1. Preheat oven to 400°F.
2. Boil the Water. Add it to the Bran Cereal and let it sit for 10 minutes. This will soften the bran so that it mixes better.
3. In a large mixing bowl, cream the Butter and the Sugar.
4. Add the Eggs and mix well.
5. Add the softened Bran Cereal, Buttermilk, Eggs, Baking Soda, Salt, and Flour.
6. Mix everything together until it is mixed well and creamy.
7. Place muffin cups in your muffin tins. I like to spray them with Pam Spray because it makes it so the muffin doesn’t stick to the pan or the paper cup.
8. Fill the muffin cups ¾ full. I like to use a measuring cup because it is less messy.
9. Bake the muffins at 400°F for 20-25 minutes, or until golden brown.
10. Serve and enjoy!
