Roasted Avocado Salsa
This is a recipe that I make often, and can’t make enough. My family loves to eat this with many different dishes. It is so simple to make and store. Sometimes when Avocados are cheap, I buy a bunch and make this salsa and then freeze it. You can have this with Tortilla chips, Tacos, Burritos, Fajitas, Vegetables, Nachos, or even with breakfast on toast. It is so versatile and delicious!
Preparation:
1. Cut 3 large, ripe Avocados in half and scoop out the insides into a food processor.
2. In the food processor, add 2 Jalapeños cut into pieces (it doesn’t have to be chopped small if you are using a food processor), ½ bunch of Cilantro, Salt, and Lime Juice.
3. Close your food processor and turn it on high. Blend all the ingredients for a few minutes. You may have to stir it to find anything it missed, but your salsa should be very smooth. When it is smooth with no chunks, then flavor to taste with more lime juice or salt.
4. Serve and enjoy!
