If you are looking for a simple and delicious comfort food, then this is it! I love a slow cooker meal, and this made the house smell delicious all day long! The kids came home from school and wanted to dive right in because it smelled so good. When dinnertime came along, they were not disappointed. They devoured this soup! It is healthy and hearty filled with tender, savory chunks of beef and lots of vegetables. It is both flavorful and filling and makes a big batch so that you can eat some the next day as leftovers. You can make this on the stove, but you will want to add extra liquid and slowly boil it for longer to make it so that the beef chunks are nice and tender. This meal is going to be on repeat for us during the cold months. I hope you love this recipe as much as we do!

Ingredients:

2 Tbl. Olive Oil

3 lb. Beef Chunks

2 medium Onions

4 cloves Minced Garlic

3 Carrots

4 large Potatoes

1 Red Pepper

2-14.5 oz. cans Diced Tomatoes

4 c. Beef Stock

2 tsp. Paprika

1 ½ tsp. Salt

¼ tsp. Pepper

¼ tsp. Cayenne Pepper

Preparation:

1. Chop the Beef into bite-size chunks. (Or you can buy stew meat already cut into pieces to make it faster).


2. Chop the Onion and mince the Garlic. Heat a frying pan. Add the Olive Oil and add the Beef. Cook the Beef until it is just starting to brown. Then add the Onion and the Garlic and cook it for about 3 minutes. Pour the beef into the Slow Cooker.


3. Peel and dice the Potatoes, Carrots, and the Red Pepper. Add them to the Slow Cooker.


4. Add the Tomatoes with the juice, Beef Stock, Paprika, Salt, Pepper, and the Cayenne Pepper. Stir together.


5. Turn on low and cook for 8-9 hours, or on high and cook for 5 hours. Stir and serve. Add fresh parsley for garnish.


6. Enjoy!
