Beef Vegetable and Noodle Soup
This is a delicious and heartwarming soup that your family will love! I love to make soup in the fall and winter when the weather turns cold. I love all kinds of soup, and this soup adds a nice variety. I love it because it has so much flavor and it is simple to make. My family devours this every time I make it and they always ask for more. I have some picky kids, so when I find something that they all love, then that recipe is a keeper! I hope you love it as much as we do!
Preparation:
1. Chop the Onions, Celery, Carrots and the Potatoes and set aside.
2. Heat your soup pot and add the Olive Oil. Add the Beef to the Pot and brown it, but don’t cook it all the way through. This will make it so the meat is tender in the soup. When it is browned, remove it from the pot and set it aside.
3. Add the Onions, Celery, Carrots, and the Potatoes, and the Minced Garlic. Sauté the vegetables for 7 minutes.
4. Add the Water, Beef Chunks, can of Tomatoes, Beef Bullion, Pepper, Parsley, and the Bay Leaves. Bring it to a boil, and then turn it down to simmer for 20 minutes.
5. Add the Wide Egg Noodles and cook it for another 10-15 minutes, or until the noodles are cooked to the desired texture.
6. Serve and enjoy!
