Beef Stew
This is an all-time comfort food! I love to eat stew during the fall and winter months. I love this recipe because it is so easy to put together and is so tasty! You can make this in a crock pot, or in an instant pot. I like it both ways, but I typically make it in the instant pot because I can make a bigger batch so I can have some left over.
Preparation:
1. Peel and chop the Onion.
2. Turn the instant pot onto Sauté. Sauté the Onion in 1 Tbl. Olive Oil till it is fragrant and partially cooked.
3. Add the Water, Cream of Celery Soup, Golden Mushroom Soup, and the Tomato Soup. Stir it all together.
4. Wash and dice the Potatoes and place them in your Instant Pot. You can peel them if you like them peeled.
5. Peel and chop the Carrots and place them in the Instant Pot.
6. Chop the Beef into bite-sized cubes and add it to the Instant Pot. Or you can use stew meat if you would like to make it quick.
7. Add the Beef Bullion, Pepper, Bay Leaves, and the Onion Soup Mix. Stir together.
8. Place the lid on the Instant Pot and set the pressure setting to high. Pressurize for 45 minutes. Release the pressure slowly.
9. Stir the soup and serve. Enjoy!
