
I am a huge curry lover. I have had so many different curry dishes over the years made by different people, and I was never very excited about it. It just didn’t have a ton of flavor. I felt like it had potential to be good, but I like food with tons of flavor. Then I got some authentic curry and I have never been the same since. I finally understood what delicious curry was, and should be. I love that I can make this recipe in the slow cooker. The chicken is soft and tender, and it is so easy to make. Not to mention, it makes the house smell amazing! This curry recipe has tons of flavor, and is my ultimate comfort food. I could eat this every week and not get tired of it. My kids also love it, so that is a huge bonus. I hope you love this recipe as much as we do!
Preparation:
1. Dice the Chicken Breast, Onion, and the Red Pepper and place it in the slow cooker.
2. Add the Diced Tomatoes, Coconut Milk, Red Curry Paste, Salt, and the Curry Powder. Stir together, then cook on low for 6-7 hours, or on High for 3-4 hours.
3. Shortly before serving, mix the Corn Starch and the Water together and add to the slow cooker. Then add the Heavy Whipping Cream and stir together.
4. Serve over Rice. Enjoy!
