This is one of my kid’s favorite dinners. I first received a similar recipe from my grandma. She made it for my husband and me one night while we were in school. I loved it and ate as much as I could because we were too poor to make it ourselves. I saved the recipe till we were done with school, and now we eat it a lot more often. The original recipe called for store-bought alfredo sauce. I made it that way for a while, but eventually I made my own alfredo sauce and it made it taste so much better! Now it is amazing!

Ingredients:

1 lb. Fettuccini Noodles

1 lb. Cooked Shrimp

1 small package Frozen Peas

6 Tbl. Butter

2 ½ c. Heavy Whipping Cream

2 c. Parmesan Cheese

1/8 tsp. Nutmeg

1/8 tsp. Freshly Ground Pepper

Parmesan Cheese for garnish

Preparation:

1. Thaw the Shrimp and pull the tails off if there are tails on the shrimp. Set it aside.


2.In a large pot, boil water. Cook the Fettuccini Noodles according to package instructions. When the pasta is done, drain it and rinse it, then put it back in the pot to keep it warm.


3. While the noodles are cooking, in a saucepan, melt the Butter. When it is melted and bubbling a lot, add the Heavy Whipping Cream. Cook the cream and the butter while stirring constantly. Cook it until it begins to boil. You want to boil it for 2 minutes.


4. Add the Parmesan Cheese, Nutmeg, and Pepper and stir it together.


5. Add the Peas and the Shrimp to the Fettuccini Noodles.


6. Stir in the Alfredo Sauce and stir it together till everything is mixed well.


7. Serve and enjoy!

Alterations

  • You can omit the peas if you don’t like them. I like the color and the flavor that it gives. But it is still delicious with just shrimp.
