One Pot Creamy Pasta
This is a delicious, simple, and quick meal that your family will love! It is fairly healthy and has some vegies in it, but my kids couldn’t really taste them. I like to use ground turkey because it is cheaper and healthier than ground beef. You could also use chicken in this recipe as a variation.
Ingredients:
1 lb. lean Ground Turkey
1 medium Onion, diced
3 cloves Minced Garlic
1 large Red Bell Pepper, diced
3 tsp. Cumin
1 tsp. Oregano
½ tsp. Pepper
2 Tbl. Knorr Chicken Bullion
16 oz. Penne Pasta
4 c. Hot Water
8 oz. Cream Cheese, softened
14.5 oz can Diced Tomatoes with juice
4 c. Baby Spinach
Feta cheese for the topping, or Parmesan Cheese
Preparation:
1. Sauté the Ground Turkey in a high sided pot. When it is partially cooked add Onion, Red Bell Pepper, and the Garlic and cook until the vegetables are tender and the meat is cooked through. Drain any liquid or fat.
2. Add the Cumin, Oregano, Pepper, and the Knorr Chicken Bullion and mix them in well.
3. Add about 4 c. Hot Water (enough to barely cover the Pasta), Penne Noodles, and Diced Tomatoes. Cover the pot and bring it to a boil, and then turn down the heat to medium and let it simmer. Cook for about 10 minutes, until the pasta is cooked. Stir occasionally.
4. When the pasta is done there will still be a little liquid left in the pot. It will absorb into the noodles. Add the Spinach and the Cream Cheese. Stir this in until the cream cheese is completely mixed in. Leave for a few minutes and it will thicken. If it doesn’t thicken completely, you can add some parmesan cheese as a supplement.
5. Serve with sprinkled Feta Cheese crumbles. Or you can use parmesan cheese if you prefer, but I love feta cheese!
