This is a meal that my family never gets tired of eating. Actually, it is my son’s favorite meal and he is always asking me to make it. He hates the alfredo sauce from the store and offers to make it himself. It is such a simple meal to make for a hungry family. I like to grill the chicken if I am making it for guests, but if I am home, then I typically will cook it in the Air Fryer because it is moist and quick, or I will cook it in a frying pan. Either way is good! But if you cook it in the frying pan you can save some of the liquid for your alfredo sauce and it gives it a good flavor.

Ingredients:

1 lb. Fettuccini Noodles

3 lb. Boneless Skinless Chicken Breast

1 Tbl. Butter (to cook chicken)

6 Tbl. Butter

2 ½ c. Heavy Whipping Cream

2 c. Parmesan Cheese

1/8 tsp. Nutmeg

1/8 tsp. Freshly Ground Pepper

Preparation:

1. Boil water and cook your pasta according to package directions.


2. While you are waiting for the water to boil, in a frying pan, place a Tablespoon of butter in the bottom of the pan. Fry the chicken on both sides until it is cooked through. You can use a little salt and pepper on the chicken to season it. When it is cooked through, remove the chicken, chop it in bite-size pieces and place it in a container to keep it warm. If you grill the chicken, then cut it in strips so that it grills quickly and grill it on low, turning it over until it is cooked through.


3. In the same frying pan, melt 1 cube ofButter. I like to let the butter cook for a couple minutes until it starts to brown. This gives your alfredo sauce a little color and it gives it more flavor.


4. Add the Cream and stir it until it starts to boil. Let the cream boil on a medium heat for 4-5 minutes while stirring constantly.


5. Add the Parmesan Cheese and stir until it is creamy and starting to thicken.


6. Add the Nutmeg and the Pepper and stir in.


7. Add the sauce and chicken to the cooked noodles and stir to combine.


8. Serve and enjoy!
