These cookies are insanely delicious! We went to Crumbl and bought one of their Rocky Road Cookies to try, and while it was good, it wasn’t my favorite. I felt like we could take something that was good and turn it amazing. I had all the kids try a piece of Crumbl’s cookie, and then thy tried this recipe. They all said that mine was so much better! These cookies are soft and filled with chocolate goodness. They have Marshmallow Fluff in the middle of the cookies, and then toasted Marshmallows on top. So, there is both marshmallow and chocolate in every bite! These cookies stay soft and don’t go stale. If you are looking for a cookie to impress, or to just enjoy with your family, then this is the perfect recipe for you. I hope you love it as much as we do!

Ingredients:

1 c. Salted Butter

½ c. Oil

1 c. Brown Sugar

½ c. Sugar

2 Eggs

¾ c. Cocoa

1 c. Melted Chocolate Chips

2 tsp. Baking Soda

1 tsp. Salt

2 tsp. Vanilla

4 ¾ c. Flour

4 c. Chocolate Chips

1 c. Chopped Pecans

7 oz. Marshmallow Fluff

Mini Marshmallows for topping

Bake at 375°F for 7-8 minutes

Preparation:

*Note: Refrigerate the Marshmallow Fluff for a few hours before you make the cookies so that it is easy to work with.


1. Preheat the oven to 375°F.


2. In a large mixing bowl cream the Butter, Oil, Brown Sugar, and the Sugar.


3. Add the Eggs and mix them really well. I usually mix them for 3-4 minutes on high.


4. Add the Cocoa, Melted Chocolate, Baking Soda, Salt, and the Vanilla. Mix well.


5. Add the Flour and mix well.


6. Add the Chocolate Chips and the Pecans and stir them in.


7. Form a large ball of dough about 2 inches in diameter. Press your thumb into the center and flatten the dough out a bit. Then place a spoonful of Marshmallow Fluff in the center and form the cookie dough around it. Place the ball of cookie dough on a greased baking sheet. Repeat. Flatten the ball of dough a little with your hand and place 3-4 mini marshmallows on top.


8. Bake for 7-8 minutes. Remove from the oven and let the cookies sit for 5 minutes before moving to a cooling rack.


9. Serve and enjoy!
