Wow! These cookies are amazing. I have tried several different red velvet cookies over the years and have never been too excited about them. I have thought they were all just ok. I wanted to create the perfect cookie. I wanted it to obviously have the right flavor, but I also wanted it to be soft and thick. I also like them loaded with white chocolate chips. So, I went back to my grandma’s cookie recipe, which is exactly what I think a cookie should be. Then I tweaked it to make it into the perfect red velvet cookie. The end result was perfection in every bite. The kids all loved them! They are very simple to make and don’t require any refrigeration. Just make the cookie dough and bake them immediately! They stay soft for days. Make plenty to share, because they will be devoured! Hope you enjoy this recipe as much as we do!

Ingredients:

1 c. Salted Butter

½ c. Canola Oil

1 c. Brown Sugar

¾ c. Sugar

2 Eggs

½ c. Cocoa

2 tsp. Baking Soda

1 tsp. Salt

1 oz. Red Food Coloring Gel

2 tsp. Vanilla

3 ¾ c. Flour

4 c. White Chocolate Chips

Bake at 375°F for 7 minutes

Preparation:

1. Preheat the oven to 375°F.


2. In a large mixing bowl cream the Butter, Oil, Brown Sugar, and the Sugar. Cream them really well.


3. Add the Eggs and mix it really well.


4. Add the Cocoa, Baking Soda, Salt, Red Food Coloring Gel, and the Salt. Mix it well.


5. Add the Flour and mix well.


6. Add the Chocolate Chips and stir them in.


7. Grease a baking sheet. Roll the dough into balls 1 ½-2 inches in diameter. Bake the cookies for 7 minutes. They will continue baking and setting up after they are out of the oven. Let them cool for 5 minutes, then move them to a cooling rack. Store them in an airtight container.
