
Nothing spells fall better than Pumpkin Muffins! These muffins are so tasty and simple! They are not too sweet and are just perfect to eat by themselves, or to combine with a yummy soup. They are fluffy and are good warm or cold. I also love them because you can put all the ingredients in one bowl and mix them. There aren’t a million steps!
Preparation:
1. Preheat oven to 375°F.
2. In a mixing bowl combine the Brown Sugar, Flour, Baking Powder, Baking Soda, Cinnamon, and Salt.
3. Add the canned Pumpkin, Eggs, and Oil. Mix all the ingredients together until it is smooth.
4. Line the muffin tins with paper muffin cups. I like to spray the inside of the cups with a little pam spray so that they come off easily.
5. Fill the muffin cups ¾ full of batter. I like to do this with a 1/3 c. measuring cup. I don’t spill as much as I do if I am trying to do it with a big spoon.
6. When all the batter is used, sprinkle ½ Tbl. of Brown Sugar on the top of each uncooked muffin.
7. Bake at 375°F for 15-20 minutes until they are cooked all the way through.
