
This is a recipe that I have had in my recipe box for years that I never tried till a few years ago. I am guessing that it came from one of my grandmas because that is where so many of my recipes came from, but it is a gem! It is a simple one-bowl recipe that only takes a few minutes to make. It also has the best flavor! I love to make these for breakfast, snacks, or to go with a soup during the cold months. They freeze well and are so delicious! I hope you enjoy these as much as I do.
Preparation:
1. Preheat the oven to 400°F.
2. In a mixing bowl combine the Flour, Sugar, Baking Powder, Baking Soda, Salt, Eggs, Sour Cream, Oil, and the Vanilla. Mix it until it is mixed well.
3. Add the Blueberries and stir them in gently. You can use fresh or frozen blueberries.
4. Fill the muffin tins with paper liners. I like to spray the liners so that they don’t stick to the muffin.
5. Fill the muffin cups with the batter. I like to use a 1/3 cup measuring cup to fill them. It is less messy that way. Fill them until they are almost full.
6. Bake the muffins at 400° for 20-25 minutes.
7. Serve and enjoy!
