I absolutely love any pistachio dessert! I had a pistachio bundt cake on a cruise and I was so excited to try it! I was actually disappointed in it because I felt like it was flavorless. It was moist, but not what I was hoping for or expecting. I decided to come home from the cruise and make my own recipe. I am so happy with how this cake turned out! It is moist and has the exact flavor that I was looking for. This recipe is both easy and delicious. It is topped with cream cheese icing. My family went wild over it. I hope you love this recipe as much as we do!

Ingredients:

Pistachio Bundt Cake

1 c. Salted Butter

1 ½ c. Sugar

8 oz. Cream Cheese

4 Eggs

6 oz. Instant Pistachio Pudding

½ c. Milk

2 tsp. Baking Powder

2 tsp. Vanilla

1 ¾ c. Flour

Bake at 350°F for 50-60 minutes


Cream Cheese Icing

½ c. Salted Butter

8 oz. Cream Cheese

¼ c. Milk

2 tsp. Vanilla

3 c. Powdered Sugar

Preparation:

1. Preheat the oven to 350°F.


2. In a medium-sized mixing bowl, cream the Butter, Sugar, and the Cream Cheese until it is smooth and creamy.


3. Add the Eggs, Pistachio Pudding, Milk, Baking Powder, Vanilla, and the Flour. Mix it until it is smooth and creamy.


4. Grease and lightly flour the bundt pan. Pour the batter evenly in the pan and spread it out.


5. Bake at 350°F for 50-60 minutes, or until an inserted toothpick comes out clean. Let the cake sit in the pan to cool for 20-30 minutes. Then turn it upside down onto a dish. Let the cake cool completely.


6. Make the Icing. In a medium-size mixing bowl, combine the Butter, Cream Cheese, Milk, Vanilla, and the Powdered Sugar. Mix it until it is smooth and creamy. Pipe the icing onto the cake.


7. Serve and enjoy!
