This is a delicious recipe that is one of my new favorites! It is pasta with a creamy, yet spicy and flavorful sauce mixed with pieces of tender chicken. It is unlike most pasta recipes and has more of a Thai flavor to it. This recipe is very simple to make and is great for a busy night because it is quick an easy, but tastes amazing. It is also a good budget friendly meal for your family. My kids devour this meal whenever I make it for them. I personally like it spicy, but if your family isn’t a big spice lover, then you can adjust how many red pepper flakes you add to yours. I hope you love this recipe as much as we do!

Ingredients:

16 oz. Fettuccini Noodles

2 lb. Boneless Chicken Breasts

2 Tbl. Olive Oil

4 tsp. Garlic, minced

2 tsp. Ginger

4 Green Onions

3 1/2 c. Cold Water

¼ c. Soy Sauce

2 Tbl. Knorr Chicken Bullion

1-2 tsp. Crushed Red Pepper

2 Tbl. Cornstarch

1 c. Creamy Peanut Butter

Preparation:

1. Cook the Fettuccini Noodles according to package directions.


2. Dice the Chicken into bite-sized pieces. Then chop the Green Onions.


3. Heat a large frying pan with the Olive. Then cook the Chicken until it is almost cooked through. Add the Garlic, Ginger, and the Green Onion and cook till the chicken is cooked through.


4. While the chicken is cooking combine the Water, Chicken Bullion, Soy Sauce, Crushed Red Pepper, Corn Starch and the Peanut Butter in a mixing bowl. Stir it together.


5. When the chicken is done cooking add the Peanut Butter mixture to the chicken. Then cook it on a medium heat while stirring it constantly. Cook it until the sauce thickens and becomes creamy.


6. Pour the sauce over the Fettuccine Noodles. Stir until it is mixed in evenly.


7. Serve and enjoy!
