Italian Chicken Spaghetti

This is one of my favorite meals! It is heathy and delicious and is a different twist to traditional spaghetti. I grew up eating this meal and loved it, but I always felt like it could be better. I decided to give it a little more flavor and the result was perfect! This recipe is simple to make and my family loves it! It is a perfect meal to serve to company or for a delicious weeknight dinner for your family. It has tons of flavor and pairs great with Garlic Bread or Breadsticks. This recipe makes a big batch, so you can cut it in half or freeze half for another quick meal. It freezes well! I hope you love this recipe as much as we do!


3-4 lb. Chicken Breast

1 Onion

2 Tbl. Olive Oil

3 cloves minced Garlic

2 15 oz. cans Tomato Sauce

2 15 oz. cans Diced Tomatoes

1 Tbl. Oregano

1 tsp. Basil

3 Tbl. Sugar

1 ½ tsp. Salt

¼ tsp. Pepper

1 Bay Leaf


1. Cook Spaghetti Noodles according to package directions.

2. Dice the Chicken and the Onion.

3. In a large frying pan or soup pot, heat the Olive Oil. Add the Chicken and the Onion and cook the Chicken until it is cooked through completely. Add the Garlic and let it cook for 3-4 minutes more.

4. Add the Tomato Sauce, Diced Tomatoes with the juice, Oregano, Basil, Sugar, Salt, Pepper, and the Bay Leaf. Stir it together and let it simmer for 15 minutes to let the flavors combine and cook some of the liquid off.

5. Remove the Bay Leaf and serve over Spaghetti Noodles. Garnish with Parmesan Cheese.

6. Enjoy!
