
This recipe is amazing! My mom used to make something similar to this when I was younger and I always liked it, but I felt like it could use some improvements. She took the old-fashioned school lunch peanut butter bars and added cocoa to the bottom layer and put melted chocolate chips on top. The bottom was always a little dry and they didn’t cut well because the chocolate on top cracked and made a mess. So, I decided to perfect the idea and create my own recipe. I made a brownie recipe that is tried and true, and delicious. Then I made the peanut butter layer thick and creamy and topped it with a softer chocolate that would cut easily and feel like it was melting in your mouth. The experiment turned out better than I could have imagined! I was blown away by how delicious they were! I ate one, and wanted to eat 5 more. The whole family went wild over them. It is definitely going to be made many times. This recipe makes a great dessert to enjoy at home, with company, or to take to a potluck. I hope you love this recipe as much as we do!
Preparation:
1. Preheat the oven to 350°F.
2. In a medium-sized mixing bowl, cream the Butter and the Sugar.
3. Add the Eggs, Cocoa, Salt, and the Flour. Mix it until it is smooth and creamy.
4. Spread the batter evenly into a 9x13 glass baking dish. Bake at 350°F for 25-30 minutes, or until it is mostly cooked through. The brownies will continue to set up after baking. Remove from the oven and let it cool completely.
5. Place the Peanut Butter in a microwave safe bowl and place the Peanut Butter in the microwave for 1 minute, or until it is melted and runny. Add the Powdered Sugar and mix it up until it is smooth and creamy. Pour it over the top of the brownies and let it sit for 20-30 minutes to harden a little. It is ok if it isn’t thickened completely before adding the top layer.
6. Melt the Chocolate Chips. I usually do this by placing them in the microwave for 30 seconds at a time, stirring them in between, until they are melted. Add the Oil and stir it in until it is mixed in well. Pour over the top of the Brownies and let it cool and thicken.
7. Serve and enjoy!
