Are you a mint chocolate lover?! If you are, this recipe is a must try for you. My whole family loves mint everything. I had the idea to try these brownies, and they came out perfect the first time! My family went wild over them. The brownies are perfectly moist and soft and so chocolatey! The topping is Mint White Chocolate Ganache and Chocolate Ganache swirled together. This seriously makes the best dessert! If you are wanting to impress your family, friends, or coworkers, then this is a recipe that will do just that. I hope you love this recipe as much as we do!

Ingredients:

Brownies

1 c. Salted Butter

2 c. Sugar

4 Eggs

½ c. Cocoa

1 tsp. Salt

1 ½ c. Flour

Bake at 350°F for 25-30 minutes


Topping

1 c. Heavy Whipping Cream

1 ½ c. Chocolate Chips

2 c. White Chocolate Chips

½ tsp. Peppermint Extract

¼ c. Heavy Whipping Cream

1 drop Green Food Coloring

Preparation:

1. Preheat the oven to 350°F.


2. In a medium-sized mixing bowl, cream the Butter and the Sugar.


3. Add the Eggs, Cocoa, Salt, and the Flour. Mix it until it is smooth and creamy.


4. Spread the batter evenly into a 9x13 glass baking dish. Bake at 350°F for 25-30 minutes, or until it is mostly cooked through. The brownies will continue to set up after baking. Remove from the oven and let it cool completely.


5. In one bowl, heat 1 c. Heavy Whipping Cream until it is boiling. Then stir the Chocolate Chips into it until they are melted and it is smooth and creamy. Let it sit for 30 minutes to cool and thicken.


6. Melt the White Chocolate Chips and then stir in ¼ c. Heavy Whipping Cream, Peppermint Extract, and the Green Food Coloring. Stir it up until it is smooth and creamy. Make this right before you put it on top of the brownies.


7. Pour the Chocolate Ganache on top of the brownies and spread it out evenly. Then pour the Mint Chocolate Ganache in circles all over the top. Then take a butter knife or a spoon and swirl it together. Then refrigerate to let it harden.


8. Serve and enjoy! Keep it in the refrigerator to store.
