This is a nostalgic treat that if you grew up in the 80’s and 90’s you will remember. I remember always getting this with my school lunch. It was one of my favorite treats! It was especially exciting if my mom made these at home. I loved the combination of oatmeal cookie with peanut butter and chocolate on top. I thought it was the perfect combination. I still love them just as much, but haven’t had them in years! I decided to make them for my kids so that they could experience the goodness for themselves. They loved them and were so jealous that used to get them in my school lunches. Those were in the days when the lunch ladies actually made our lunch from scratch and real ingredients. Lunch was so much better when I was a kid than what my kids get nowadays. Anyway, this recipe is delicious and so simple to make. If you want a nostalgic treat that your kids will love, then make this and take a trip down memory lane. I hope your family loves these as much as mine!

Ingredients:

Cookie

¾ c. Salted Butter

½ c. Sugar

1 ½ c. Brown Sugar

1 Egg

½ c. Peanut Butter

½ tsp. Salt

½ tsp. Vanilla

1 tsp. Baking Soda

2 c. Quick Oats

1 ½ c. Flour

Bake at 325°F for 10 minutes


Peanut Butter

1 ½ c. Creamy Peanut Butter


Chocolate Frosting

½ c. Salted Butter

½ c. Cocoa

2 tsp. Vanilla

¼ c. Milk

3-4 c. Powdered Sugar

Preparation:

1. Preheat the oven to 325°F.


2. In a medium-sized mixing bowl cream the Butter, Sugar, and the Brown Sugar.


3. Add the Egg and Peanut Butter. Mix well.


4. Add the Salt, Baking Soda, Vanilla, and Oatmeal. Mix well.


5. Add the Flour and mix well.


6. Spread the cookie dough in a 10x15 greased baking sheet. It will be a little stiff. Bake for 10-11 minutes. Remove from the oven.


7. While it is still warm, put the Peanut Butter on top. It will melt and become easy to spread. Spread the Peanut Butter evenly over the top of the cookie.


8. Make the Chocolate Frosting. In a medium-sized mixing bowl add the Butter, Cocoa, Milk, Vanilla, and Powdered Sugar. Mix it until it is smooth and creamy.


9. Spread the Chocolate Frosting over the top of the Peanut Butter.


10. Serve and enjoy!
