If you are looking for an easy, delicious dinner, then this is a fabulous recipe! I love one pot meals because it means less cleanup, and simplicity. I also don’t like making complicated meals on a busy night. So, this recipe is a win all the time! This pasta recipe combines the flavor of fajitas with a creamy alfredo pasta. The kids absolutely love it! I also love that it makes enough for two meals so that I don’t have to cook on a busy night. I like to pair this with a fruit and a vegetable to make a balanced meal. I hope you love this recipe as much as we do!

Ingredients:

2 Tbl. Olive Oil

3-4 lb. Boneless Chicken

1 Onion

2 Bell Peppers (Red, Orange, or Yellow)

16 oz. Fettuccine Noodles

3 c. Water

2 c. Heavy Whipping Cream

3 Tbl. Fajita Seasoning

1 ½ c. Parmesan Cheese

Preparation:

1. Dice the Chicken, Onion, and the Peppers. Heat a large, heavy bottom cooking pot and add the Olive Oil. Cook the Chicken until it is mostly cooked through. Then add the Onion and the Peppers and finish cooking the Chicken.


2. Add the Fettuccine Noodles. It is easier if you break them in half. Add the Water, Cream, and the Fajita Seasoning. Stir it, then cover it with a lid. Cook it until the noodles are cooked through, stirring every 2-3 minutes.


3. Add the Parmesan Cheese and stir it to combine.


4. Serve and enjoy!
