This is a delicious and simple meal that my family loves! I love to cook in my Instant Pot because it is always so fast and easy. I am a busy mom and most week nights I need something fast and easy that I know my kids will eat well. This is one of those meals for me. I love tacos of any kind, so easy taco pasta always hits the spot! It is creamy and delicious! I hope that you love this recipe as much as we do!

Ingredients:

1 lb. Ground Beef

1 Onion

1 Jalapeño

16 oz. Penne Pasta

2 c. Heavy Whipping Cream

1 ½ c. Water

4-5 Tbl. Taco Seasoning

1 c. Cotija Cheese

2 c. Shredded Cheese

1-2 Tomatoes, diced

½ c. Sliced Olives

Preparation:

1. Dice the Onion and the Jalapeño. I remove the seeds from the Jalapeño so that it isn’t too hot for my kids, but if you like it hot, then leave them in!


2. Turn the Instant Pot onto Sauté. Cook the Ground Beef, then add in the Onions and the Jalapeño and cook them until they are tender.


3. Spread the meat out evenly on the bottom of the Instant Pot. Then spread the Pasta out evenly over the top. Add the Cream, Water, and the Taco Seasoning.


4. Place the lid on top of the Instant Pot and press Pressure Cook. Then set the time for 5 minutes. When it is done do a quick release of pressure.


5. Stir the Pasta. Add the Cotija Cheese and stir it in. Then cover it with the Shredded Cheese and place the lid back on to let it melt.


6. Add the Olives and the Tomatoes.


7. Serve and enjoy!

Alterations

  • You can use any kind of pasta that you like.

  • You can substitute Ground Turkey in place of the beef.
