Lasagna
Lasagna is one of my favorite meals. It is one of those meals that can take forever, but this recipe is actually pretty fast to put together. It is also one of the meals that I will make a double batch of because I can put one in the freezer to cook on a day that I am busy or sick. It is a hearty and filling recipe and tastes a lot better than Stouffers. I usually use oven ready noodles because it is faster, but I think it tastes a little better with noodles that I boiled. You can do it either way. Hope you enjoy this recipe!
Ingredients:
First Layer
10-12 Lasagna Noodles
2nd Layer
2 lb. Sausage
1 ½ Tbl. Basil
1 ½ tsp. Salt
2 15 oz. cans Petite Diced Tomatoes
3 cans Tomato Paste
3rd Layer
2 15 oz. containers Ricotta Cheese
2 Tbl. Parsley
½ tsp. Pepper
1 c. Parmesan Cheese
Cheese to go in between layers
9 c. Mozzarella Cheese, shredded and divided
Bake at 350°F for 30-40 minutes
Preparation:
1. Boil 12 Lasagna Noodles according to package directions, or use Oven Ready noodles.
2. In a frying pan, cook the Sausage until it is cooked through completely. Add the Garlic and cook for 2 minutes. Drain off any grease.
3. Add the Basil, Salt, Diced Tomatoes, and Tomato Paste to the sausage and mix it completely. Let it cook for 3 minutes and set aside.
4. In a mixing bowl, combine the Ricotta Cheese, Parsley, Pepper, and Parmesan Cheese.
Stir them together to combine.
5. Preheat the oven to 350°F.
6. In a 9x13 glass baking dish, layer 3-4 Lasagna Noodles, 1/3 of the Tomato Sauce, 1/3 of the Ricotta Cheese mixture, and 2 c. of shredded Mozzarella Cheese. Layer it the same way two more times. On the last layer use 3 c. of Mozzarella Cheese to top the Lasagna.
7. Bake the lasagna uncovered for30-40 minutes, until the cheese is melted and bubbling.
8. Serve and enjoy!
