Moist Zucchini Bread
I have been in search of a perfect Zucchini Bread recipe for years. I never liked the one that I grew up with because it was dry and crumbly. It also had way too much spice. I have tried several recipes and still had the same result. I decided to venture out on my own and create my own recipe. I have found that the secret ingredient for making the perfect, moist Zucchini Bread is cream cheese. This recipe makes such a moist loaf of bread that has the perfect amount of cinnamon. My kids would eat this every day for breakfast if it was available. I hope you love this recipe as much as we do!
Preparation:
1. Preheat the oven to 350°F.
2. In a medium-sized mixing bowl cream the Sugar, Cream Cheese, Eggs, and the Vanilla until it is smooth and creamy.
3. Add the Flour, Cinnamon, Baking Soda, Baking Powder, Salt, and the Oil. Mix well.
4. Grate the Zucchini and add it the batter. Mix it in well.
5. Grease 2 bread pans. Split the batter evenly between the 2 pans. Bake at 350° for 50-60 minutes, or until an inserted toothpick comes out clean. Let them sit in the pans for 10-15 minutes before removing the loaves.
6. Remove the Zucchini Bread from the pans and let it cool on a cooling rack.
7. Serve and enjoy!
