This is a light and delicious blueberry bread recipe! I love the combination of blueberries and lemon and this recipe is perfect! It took me a few tries to get it just right and my family loves it! My daughter would eat this for breakfast every day if she could. It has so much flavor, but is light and soft at the same time. The glaze on top finishes this bread off! It is so yummy! This recipe is great for breakfast, brunch, or a snack anytime. I hope you enjoy it as much as we do!

Ingredients:

Blueberry Bread

½ c. Salted Butter

1 ¼ c. Sugar

2 Eggs

½ tsp. Salt

2 tsp. Baking Powder

½ c. Sour Cream

7 Tbl. Lemon Juice

2 c. Flour

1 c. Fresh or Frozen Blueberries

Bake at 350°F for 50-60 minutes


Glaze

1 c. Powdered Sugar

2 Tbl. Lemon Juice

Preparation:

1. Preheat the oven to 350°F.


2. In a mixing bowl cream the Butter and the Sugar.


3. Add the Eggs and mix well.


4. Add the Salt, Baking Powder, Sour Cream, Lemon Juice, and the Flour. Mix it well.


5. Coat the Blueberries in Flour before you mix them into the batter. This makes it so that they don’t all sink to the bottom when it bakes. Trust me on this step. Stir the Blueberries into the batter.


6. Grease a bread pan and line it with Parchment Paper. I like to sprinkle some flour over the greased parchment paper as well so that the bread doesn’t stick.


7. Pour the batter into the pan.


8. Bake for 50-60 minutes, or until an inserted toothpick comes out clean. Remove from the oven. Let it sit for 5-10 minutes before removing the bread from the pan. Then remove the bread from the pan and let it cool on a cooling rack.


9. While the bread is cooling, make the glaze by mixing the Lemon Juice and the Powdered Sugar. Spread the glaze over the warm loaf of bread.


10. Serve and enjoy!
