I love to make this banana bread with the bananas that are getting too old to eat. The bread tastes better when the bananas are over ripe. It is so easy to put together and makes a yummy breakfast that is quick and easy. The only drawback is that you have to have an hour to cook it. I usually whip it up in 5 minutes and then have some time to get other things done while it cooks. And it makes the house smell SOOO good!

Ingredients:

Banana Bread

3 Mashed Bananas

2 c. Flour

1 c. Sugar

½ tsp. Baking Powder

1 tsp. Baking Soda

½ tsp. Salt

2 Eggs

½ c. Canola Oil

Bake 350°F for 1 hour


Vanilla Frosting

½ c. Salted Butter

3 Tbl. Milk

2 tsp. Vanilla

3-4 c. Powdered Sugar

Preparation:

1. Preheat the oven to 350°F.


2. Mash up the bananas so there are no chunks. If you prefer having chunks then you can do it that way, but I personally prefer to have them mashed really well.


3.  Add the Sugar, Flour, Baking Powder, Baking Soda, Salt, Oil, and Eggs. You can add everything all at once and then mix it up. It is that simple!


4.  Pour your batter into a bread pan. Mine is 23.5x13.3x7.0 cm. It is a standard size bread pan (this one works great). One recipe makes one loaf of bread. Bake for 1 hour. Poke the center with a toothpick and when it comes out clean your bread is done!


5. Serve and enjoy!

Alterations

  • You can add 1/2 c. Chopped Pecans to this recipe.

  • You can substitute half of the oil with unsweetened applesauce to make it a little healthier.  It doesn’t affect the flavor at all.
