This is without question the best lemon bread I have ever eaten. I love everything lemon. It tastes like spring and summer to me. It is simple to make and my family loves it! You can make this any time of year, and can use it for breakfast, dessert, or any time of day. It also makes the house smell delicious all day when you bake it. You are going to love this recipe!

Ingredients:

Lemon Bread

1 c. Salted Butter

2 c. Sugar

4 Eggs

1/3 c. Lemon Zest

½ tsp. Baking Powder

½ tsp. Salt

1 tsp. Vanilla

¾ c. Buttermilk

3 c. Flour

¾ c. Lemon Juice

Bake at 350°F for 45 minutes


Glaze

2 c. Powdered Sugar

3 ½ Tbl. Lemon Juice

Preparation:

1. Preheat the oven to 350°F.


2. Grease and line 2 bread pans with parchment paper. I like to trace around the pan and then cut it out. Grease the parchment paper as well so that it doesn’t stick.


3. Prepare the Lemon Zest by grating the lemon peel off the lemon. It takes between 3-5 lemons depending on the size.


4. In a large mixing bowl, cream the Butter and the Sugar.


5. Add the Eggs and mix them well.


6. Add the Lemon Zest, Salt, Baking Powder, Vanilla, Buttermilk, and Flour. Mix well.


7. Add the Lemon Juice and mix well.


8. Pour the batter into the pans evenly.


9. Bake for 45 minutes, or until an inserted toothpick comes out clean.


10. Remove the loaves from the pans and place on a cooling rack.


11. Make the Lemon Drizzle by combining the Lemon Juice and the Powdered Sugar. Drizzle it over the loaves, and let them cool.


12. Serve and enjoy!
