
This is a delicious and simple pie recipe that tastes amazing! This pie is so much better than a store-bought pie. It has buttery, flaky crust and is filled with delicious berries that are perfectly sweetened. This pie isn’t runny, which is a real pet peeve of mine. I don’t like a soggy pie crust. I feel like you might as well not have any pie crust at all if it is going to be soggy. This pie has the perfect texture and flavor, and it goes perfectly with a scoop of vanilla ice cream. You can make this pie for Thanksgiving, or just about any time of year. I hope you love this recipe as much as we do!
Preparation:
1. Make the Pie Crust. Click here for my flakey and delicious recipe. If not, feel free to use a store-bought crust.
2. In a saucepan, add the Mixed Berries, Sugar, Corn Starch, Lemon Juice, and the Butter. Cook it on a medium heat until it starts to boil. Let it boil while stirring it constantly for 3-4 minutes. Remove it from the heat.
3. Preheat the oven to 400°F.
4. Roll out the Pie Crust. Place a crust in the bottom of a regular pie dish. Then pour the Pie Filling inside. Roll out the top crust and cut it into strips about ¾-1 inch thick. Place strips across the top of the pie in one direction. Then weave the other strips in carefully. If you don’t want to do a weave, you can place a full crust on top and cut some holes in to let the steam out so that it doesn’t bubble up.
5. Cut the extra dough away from the edges of the pie, leaving 1 inch to fold under. Fold the edge under and then crimp the edges of the pie.
6. Bake the pie at 400°F for 30 minutes, or until lightly golden browned.
7. Remove the pie from the oven and let it cool completely. Refrigerate.
8. Serve and enjoy!
