From the sundried tomatoes, to the tender pieces of chicken and gnocchi, this soup hits the spot. It is colorful and healthy. This also makes a big batch so there is plenty for another meal. This recipe actually even tastes a little better the second day because the flavors have had time to mix well. Serve this with fresh bread, rolls, or breadsticks and it is heavenly! Preparation:
1. Dice the Chicken and the Onion.
2. Heat a large cooking pot on a medium heat. Then add the Olive Oil, Chicken, Onion, and the Minced Garlic. Cook until the chicken is cooked through.
3. Add the Sundried Tomatoes, Chicken Stock, Water, Chicken Bullion, Pepper, and the Gnocchi. Turn onto a high heat and cook until the Gnocchi is cooked through.
4. Stir in the Half and Half Cream and add the Spinach. Stir until the spinach is wilted.
5. Serve and enjoy!
