Creamy Chicken Noodle Soup
This is a delicious soup recipe that my family loves! Chicken Noodle Soup is one of those comfort foods that everyone loves, and that I make when someone isn’t feeling well. I also love to make this on a cold, rainy or snowy day. It is just one of those meals that always tastes good! This recipe is arguably the best I have ever eaten. I received this recipe from my adopted grandma several years ago and I always come back to it. I have made a few slight changes, but it is delicious! Even my picky kids eat this meal well! I hope you enjoy it as much as I do!
Preparation:
1. Dice the Chicken into bite-sized pieces. Cook the Chicken in the Olive Oil until it is cooked though.
2. While the chicken is cooking, peel and chop the Carrots.
3. In a large soup pot, combine the Chicken, Carrots, Water, Chicken Bullion, and the Pepper. Bring to a boil and boil until the Carrots are tender.
4. While the Carrots are cooking, in a small saucepan combine 1 c. Water, Apple Juice, and the Butter. Bring it to a boil, then turn down the heat and let it simmer. When half the liquid has boiled off, then stir in the Cream and set aside.
5. When the Carrots are tender, add the Noodles and cook them for 8-9 minutes more.
6. In a small bowl mix the Flour and 1 c. Water. Slowly stir it into the boiling soup, stirring constantly.
7. Stir in the cream mixture. Add the Parsley. Remove from the heat.
8. Serve and enjoy!
