Marinated Hawaiian Chicken
This is a recipe that I received from my great-uncle. I don’t know where he got it from but I adapted it and made it my own. He didn’t have any measurements on the recipe, just ingredients. So, I got to figure out how to make it a readable recipe. It is such an easy recipe to make and the flavor is amazing! It is the perfect summertime barbeque recipe. When I made it all the kids were asking for more. I made it with drumsticks, but you could make this with chicken breast, thighs, or even wings. The longer you marinate the chicken, the better it will taste. But if you are short on time, you can marinate it for an hour and it will still be delicious. I hope you enjoy it as much as my family!
Preparation:
1. Peel and chop the Onion and place it in a small mixing bowl. Mince the Garlic and add I to the onion.
2. Grate the Ginger and add it to the onion.
3. Add the Baking Soda (this will tenderize your chicken), Brown Sugar, Olive Oil, and Soy Sauce. Stir it together.
4. In a Ziplock bag, place the chicken and the marinade. Let the chicken marinate for 1-12 hours. You can start it marinating the night before you cook it for the best results. Move the bag around every few hours so that the chicken will marinate evenly.
5. Grill the chicken on a low heat, turning it every few minutes until it is cooked evenly.
6. Serve and enjoy!
