Roasted Garlic Potatoes
I love to make these potatoes as a side dish. They are so simple, and they taste delicious! They have so much flavor. You can make these as a side with Hamburgers, Chicken, Fish, or any meat dish. I like to use Red Potatoes because you can leave the skin on to give them more color and flavor. You can make them with Yellow Potatoes as well. If you use Russet Potatoes, I suggest that you peel them before you make this recipe.
Preparation:
1. Preheat your oven to 425°F.
2. Wash 2 ½ lb. of Red Potatoes. Cut them in cubes that are bite-sized and place them in a mixing bowl.
3. Add the Olive Oil, Garlic, Salt, Pepper, and Parsley. Mix the potatoes until they are completely coated.
4. Spread the potatoes out on a baking sheet. It is preferable that you have them a single layer thick on the pan.
5. Bake the potatoes for 20 minutes. Remove them from the oven and stir them so that they get roasted evenly. Then cook them for another 20 minutes.
6. Serve and enjoy!
