Instant Pot White Chicken Chili
This is one of my family’s favorite meals. They are always begging me for White Chili, no matter what time of year it is. I love it because it is a simple and cheap meal that I know that they will eat quickly without any complaining. I also love it because I love to make meals in the Instant Pot. You can make this in a Crockpot, or on the stove, but it is so simple in the Instant Pot. I hope you love this delicious comfort food as much as we do!
Ingredients:
2 cans Black Beans
2 cans Great Northern Beans
2 cans Rotel Diced Tomatoes with Green Chilies
1 small bag Frozen Corn
½ c. Milk
2 Tbl. Onion Powder
4 Tbl. Dry Ranch Dressing Mix (or 2 packages)
2 Tbl. Cumin
2 tsp. Chili Powder
3 Tbl. Knorr Chicken Bullion
2-8 oz. packages Cream Cheese
2-3 Chicken Breasts
Preparation:
1. Drain the Black Beans and place them in the Instant Pot.
2. Add the Great Northern Beans, but don’t drain them. Add the liquid to the pot.
3. Add the Rotel Diced Tomatoes with Green Chilies, don’t drain the liquid.
4. Add the Frozen Corn, Milk, Onion Powder, Dry Ranch Dressing Mix, Cumin, Chili Powder, Knorr Chicken Bullion, and the Cream Cheese.
5. Place the Chicken Breasts on top of everything and place the lid on the Instant Pot. Set the pressure to High and cook it for 20 minutes.
6. When it is done cooking, do a quick release. Remove the Chicken and place it in a bowl and shred it.
7. Stir the Chicken back into the soup and stir the soup until the Cream Cheese is mixed in. The soup will be a little runny to begin with, but it will thicken as it cools a little. I let it sit for 30 minutes before I serve it.
8. Serve and enjoy!
You can serve it with Cheese, Sour Cream, Avocado, or Salsa.
