This soup is a family favorite. Whenever I fix this soup, my kids always eat it and ask for more! That is always a win for me! I am also such a soup lover when the weather gets cold, so I am always on the lookout for good recipes! I have tried several potato soups, but this one is by far my favorite. It is one of those comfort foods. It pairs well with salad, fresh bread, rolls, or muffins. I usually make a big batch so that we can have some the next day, and then I don’t have to cook again! And the kids have 2 meals that they love!

Ingredients:

16 slices of Uncooked Bacon (or ¾ c. Bacon Bites)

1 Chopped Onion

6 c. Cubed Potatoes

3 c. Water

2- 10 1/2 oz. cans Cream of Chicken Soup

2 c. Sour Cream

3 c. Milk

1-1 1/2  tsp. Salt

Dash of pepper

2 Tbl. Parsley

Preparation:

1. Cut 16 pieces of Bacon into ¼ inch strips straight into a medium saucepan. (See Picture) If you would like to make it quicker, then you can use ¾ c. Bacon Bites instead of cooking the bacon.


2. Sauté the bacon in a pan until it is mostly cooked.


3. Chop 1 large Onion and sauté it with the Bacon. When the bacon is cooked and onion is transparent, then drain the grease and discard it.


4. Peel and cut the Potatoes into small bite-sized cubes. Place the potatoes in a large, heavy bottomed cooking pot and add the water. (If preferred, and for a faster result, leave the peels on the potatoes). Here is a link to a pot that I use.


5. Add the Bacon and Onions to the potatoes and boil the potatoes until they are tender.


6.  Turn the burner on medium low and add the Milk, Sour Cream, Cream of Chicken Soup, Salt, a dash of Pepper, and Parsley. Stir all these ingredients in until they are mixed well. You may want to add more salt according to taste. Cook it for 5-10 minutes on low to let it simmer and mix the flavors together.


7. Serve and enjoy!
