This is a delicious recipe that my family loves! I used to make this on the stove, but I love that I can now make it in the Instant Pot. It takes so much less time and it turns out perfect every time. You can still make it on the stove, but I definitely prefer it in the Instant Pot! This soup is so flavorful! It is full of lentils and vegetables. It is a very healthy soup and very filling. I love to make this when it is cold outside. My kids love this soup and always eat it well. You can make this vegetarian, but I like to add some bacon bits to it for more flavor. I hope you love this soup as much as we do!

Ingredients:

2 Tbl. Olive Oil

2 Large Onions

2 tsp. Garlic

6 Carrots

3-4 stalks Celery

7 c. Water

1 15oz. can Diced Tomatoes with Juice

2 c. Dry Lentils

¼ tsp. Pepper

2 Bay Leaves

5-6 Tbl. Knorr Chicken Bullion

1 Tbl. Parsley

½ tsp. Paprika

1 c. Bacon Bits

Preparation:

1. Dice the Onion and mince the Garlic. Press the Sauté button on the Instant Pot. When the Instant Pot is heated add the Olive Oil and sauté the Onion and the Garlic until it is soft and tender.


2. Dice the Carrots and the Celery. Add the Carrots and the Celery and sauté them for 2-3 minutes.


3. Add the Water, Diced Tomatoes, Dry Lentils, Pepper, Bay Leaves, Chicken Bullion, Parsley, and the Paprika. Stir to combine.


4. Place the lid on the Instant Pot. Press the High-Pressure button and cook it for 15 minutes on high pressure. When it is done, do a quick release. Stir the soup.


5. Add the Bacon Bits and stir in well.


6. Serve and enjoy!

Alterations
