This is one of my favorite soups to make. I absolutely love cooking in my Instant Pot because it is so quick and easy. I usually make this soup when I have cooked a ham and need to finish it off, but you can also make it by chopping some ham and adding it to the soup. I have done it both ways. This soup is both flavorful and healthy. It is filling and pretty cheap. The biggest win is that my kids love it! They devour it and ask for more, which doesn’t always happen. I hope you love this recipe as much as we do!

Ingredients:

5 Carrots

1 Onion

2 tsp. Minced Garlic

2 Tbl. Olive Oil

1 lb. Dry Great Northen Beans

6 c. Hot Water

¼ c. Knorr Chicken Bullion

15 oz. can Tomato Sauce

Ham Bone, or 2 lb. Chopped Ham

Cook for 60 minutes

Preparation:

1. Dice the Onion. Peel and Chop the Carrots.


2. Turn the Instant Pot onto Sauté. Add the Olive Oil, Onion, and the Garlic. Let it cook until the onions are starting to turn translucent. Add the Carrots and cook for 2-3 minutes. Click here for the Instant Pot that I use and love!


3. Add the Great Northern Beans, Hot Water, Knorr Chicken Bullion, Tomato Sauce, and the Ham Bone (or chopped ham).


4. Stir together and then place the lid on the Instant Pot. Turn it on high pressure for 60 minutes. When it is done do a quick release of pressure.


5. If you used a ham bone, remove the bone from the soup and chop the ham into bite-sized pieces. Return the ham to the soup and discard the bone. Stir together.


6. Serve and enjoy!
