
As a kid growing up this was my favorite soup! It is creamy and delicious and quite healthy. It is also quick and simple and a cheap meal to make. Soup is one of my favorite things to make in the fall and winter. I could eat it every day! This comfort food will warm you up.
Preparation:
1. Chop ½ Yellow Onion.
2. Brown the Hamburger. When it is half cooked add the Onion and the Garlic and finish cooking. Drain any grease when it is cooked through.
3. Add the Tomato Juice, Water, Grated Carrot, and the Pepper. Bring it to a boil and cook until the carrots are tender. About 10-15 minutes.
4. Add 2 cans of Cream of Mushroom Soup and whisk it in so that there are no chunks.
5. Add the Brown sugar. The brown sugar helps to take the edge off the tomato juice so that it isn’t so tangy. You don’t want your soup to be sweet, though.
6. Heat the soup through on Medium-low.
7. Serve and enjoy!
