Autumn Soup
This is one of my favorite soup recipes! I love it because it is so flavorful and also so healthy! I used to make this pretty often when I was a poor college student because it was cheap and I lived where it was cold. So, I loved to come home and heat up a bowl of soup, and this was often the soup I ate. I also love this recipe because it is simple to make and really doesn’t take very long. I hope you love it as much as I do!
Preparation:
1. Dice the Onion and set it aside.
2. Brown the Hamburger, Onion, and the Minced Garlic in a large soup pot. Cook it until the Hamburger is cooked though completely. Drain the grease and return the hamburger to the pot.
3. While the hamburger is cooking, dice the Carrots, Potatoes, and the Celery.
4. Add the Tomato Juice, Water, Carrots, Potatoes, Celery, Parsley, Sugar, Worcestershire Sauce, Salt, Pepper, and the Bay Leaf.
5. Bring the soup to a boil. Boil it until the vegetables are tender, usually between 20-30 minutes.
6. Remove the soup from the heat.
7. Serve and enjoy!
