Ginger Muffins
These muffins are just delightful! If you are a fan of Gingerbread cookies, then you will love these muffins! I got this recipe from my grandma, but never tried them. I had it in my recipe box for years before I tried them. I was missing out! I did embellish them a little from her original recipe, but this recipe is so good! These really taste like eating a soft gingerbread cookie, and they make your house smell like gingerbread. My kids all love them, which is saying something, because generally there is at least one that doesn’t like my muffins. The streusel topping on top makes these muffins perfect! They have a crispy cinnamon topping with a soft gingerbread muffin. Your family is going to love you! I hope you love this recipe as much as we do!
Ingredients:
Ginger Muffins
4 ½ c. Flour
½ c. Sugar
½ c. Brown Sugar
1 ½ tsp. Baking Soda
½ tsp. Salt
1 tsp. Ginger
1 tsp. Cinnamon
1 tsp. Vanilla
1 Egg
½ c. Oil
1 c. Water
1 c. Molasses
Streusel Topping
1/4 c. Salted Butter
½ c. Sugar
1/3 c. Flour
½ tsp. Cinnamon
Bake at 350°F for 20-25 minutes
Preparation:
1. Preheat the oven to 350°F.
2. In a mixing bowl combine all the muffin ingredients. Combine the Flour, Sugar, Brown Sugar, Baking Soda, Salt, Ginger, Cinnamon, Vanilla, Egg, Oil, Water, and the Molasses. Mix it up well.
3. Spoon the batter into the muffin tins. Fill it about 2/3 full. These muffins rise quite a bit.
4. Make the Streusel topping. In a bowl combine the Butter, Sugar, Flour, and the Cinnamon. Mix it together well. Then sprinkle it on top of the muffins.
5. Bake for 20-25 minutes.
6. Remove from the oven.
7. Serve and enjoy!
