These are a delicious cookie that is a mixture of peanut butter and marshmallow. They look complicated to make, but they really are pretty simple. I love anything with marshmallow, and cookies with it are just at the next level. I like to put the marshmallow fluff in the freezer ahead of time so that it is easy to work with, otherwise it gets pretty messy. These cookies stay soft for days and have the best flavor. The kids love them! I hope you love this recipe as much as we do!

Ingredients:

1 c. Salted Butter

1 ½ c. Brown Sugar

½ c. Sugar

½ c. Oil

2 c. Eggs

1 c. Peanut Butter

2 tsp. Baking Soda

1 tsp. Salt

2 tsp. Vanilla

4 c. Flour

13 oz. Marshmallow Fluff

Bake at 375°F for 8-9 minutes

Preparation:

1. Place the Marshmallow Fluff in the freezer a couple of hours before you make the cookies so that it is easy to work with.


2. Preheat the oven to 375°F.


3. In a mixing bowl, cream the Butter, Brown Sugar, Sugar, and the Oil.


4. Add the Peanut Butter and the Eggs and cream well.


5. Add the Baking Soda, Salt, and the Vanilla and mix well.


6. Add the Flour and mix well. You should be able to roll the dough into a ball.


7. Grease a baking sheet. Roll a ball of dough about 2 inches across. Then press into it with your thumb to make a big indentation. Make a ball of Marshmallow Fluff that is about ¾ inch in diameter, then put it in the middle of the ball of cookie dough and press the dough all around it. Then place it on the baking sheet and repeat. You may need to place the Marshmallow Fluff in the freezer in between pans baking to keep it firm.


8. Bake the cookies for 8-9 minutes. Remove them from the oven and let them sit on the pan to cool for a few minutes. Then move them to a cooling rack.


9. Serve and enjoy!
